The Best Tofu Scramble Recipe

Plant-based eating can be difficult, especially in an RV. This tofu scramble is quick, easy, and damn delicious.

I adapted this recipe from One Green Planet and f*$%in' love it. It's great for breakfast, lunch, brunch, dinner, drunken midnight snack, whatever! Even non-tofu eaters will enjoy it (usually more successful if you don't tell them it's tofu).
Ingredients:
One 14 ounce container of tofu
3-4 tablespoons soy sauce
2 tablespoons toasted sesame oil
1/4 cup nutritional yeast
1/4 teaspoon garlic powder
1/4 teaspoon turmeric
1/2 teaspoon ground cumin
Sauteed vegetables
Preparation:
Whisk together soy sauce, sesame oil, nutritional yeast, garlic powder, and cumin.
Squish the moisture out of the tofu with paper or clean cloth towels.
Crumble tofu into bite-sized pieces and stir into the oil/spice mixture until evenly coated.
Cook tofu over medium-high heat in a lightly (sesame) oiled pan for about 10ish minutes, flipping occasionally for even browning.
In a separate pan, saute any vegetables you like or have on hand. I like to add things like mushrooms, onions, peppers, spinach, and broccoli.
Add cooked tofu and veggies, heat for a bit, and enjoy!
