The Best Tofu Scramble Recipe

Plant-based eating can be difficult, especially in an RV. This tofu scramble is quick, easy, and damn delicious.


I adapted this recipe from One Green Planet and f*$%in' love it. It's great for breakfast, lunch, brunch, dinner, drunken midnight snack, whatever! Even non-tofu eaters will enjoy it (usually more successful if you don't tell them it's tofu).


Ingredients:

  • One 14 ounce container of tofu

  • 3-4 tablespoons soy sauce

  • 2 tablespoons toasted sesame oil

  • 1/4 cup nutritional yeast

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon turmeric

  • 1/2 teaspoon ground cumin

  • Sauteed vegetables

Preparation:

  1. Whisk together soy sauce, sesame oil, nutritional yeast, garlic powder, and cumin.

  2. Squish the moisture out of the tofu with paper or clean cloth towels.

  3. Crumble tofu into bite-sized pieces and stir into the oil/spice mixture until evenly coated.

  4. Cook tofu over medium-high heat in a lightly (sesame) oiled pan for about 10ish minutes, flipping occasionally for even browning.

  5. In a separate pan, saute any vegetables you like or have on hand. I like to add things like mushrooms, onions, peppers, spinach, and broccoli.

  6. Add cooked tofu and veggies, heat for a bit, and enjoy!
